Noodles used in classic chow mein are Chinese egg noodles. Their composition is very similar to spaghetti but the texture and flavour are noticeably different. Chow mein is a Chinese dish made from stir-fried noodles with vegetables, choice of your protein + scrambled eggs (No Eggs for Veg) and Dark soy sauce, oyster sauce and ketchup.
